Here's a great way to make your holiday breakfast fun and cheap!
I make pancakes a lot for my kids. I used to purchase box mixes because it was easier than making it from scratch, so I thought, and it was only a few dollars. Well, I decided that maybe I could make my own for NO money with ingredients I already have in my pantry. I found a recipe recently and made a few modifications to make it my own. It was a success for zero dollars! I have enough to last me several weeks.
Mixing & Pouring the Batter
Following the directions on the shown picture, make the batter. You may want to use more than 1/4 cup of milk for thinner pancakes. I am a coffee lover, and I love to buy flavored creamer. Sometimes I'll use it instead of milk to add some variety. Also, I took an empty creamer container and used it to pour the pancake batter into the pan. It allows me to make fun pancake designs more easily than with a spoon.
Shaping the Batter
For the holiday season, I'm using cookie cutters as pancake molds. I discovered that the cheap metal cutters work better than copper ones. Spray the cutters with cooking spray and set them in the pan to heat up. Using my "high-tech pouring container", it was really easy to fill the cookie cutters quickly.
Removing Cutters, Flip & Serve
Once you see bubbles on the outer edges of the pancakes, slip off the cookie cutters (use tongs -- they're HOT!), and then flip! When I plate the pancakes, I try to make it fun by adding "snow" and putting them onto a holiday plate. I keep a stack of seasonal plates so I can be festive all year long. They are cheap at $0.69 to $1.00 each.

Have fun making a pancake breakfast with your family this holiday season. Try to shake things up by using flavored creamer, dropping in chocolate chips (or other sweet goodies), and use a variety of cookie cutters.
